Boom Boom takes bagels beyond breakfast

BOOM Boom Bagels is the kind of place you’d like to have in your neighborhood: it’s casual and friendly, and serve up quality coffee and good bagels at fair prices.

Situated on trendy Anfu Road, Boom Boom is the latest endeavor from Dave Seminsky, the man behind bean-roasting cafe Sumerian on Shaanxi Road N.

“Sumerian opened early in 2012 and had a very rocky start. We’ve learned that to be successful in a competitive market like coffee it takes innovation and a strong team to execute new ideas. We are constantly experimenting with coffee to push the product further and to continue to keep us at the forefront,’’ said Seminsky.

In the early days of figuring out how to make Sumerian successful Seminsky tried numerous strategies, from sourcing pre-made sandwiches to making them in-house, to at one point collaborating with Spread The Bagel.

“We wanted to offer our customers something to eat and bagels are a versatile product and a great addition to coffee,” he added. “With the opening of Dogtown next to Sumerian... we also saw the potential of craft beer and artisanal cocktails. Combining these three components: coffee, bagels and alcohol drinks, Boom Boom Bagels was born.’’

Of course, bagels are at the core of Boom Boom, which serves up hearty bagel sandwiches perfect for any time of day.

“A bagel can be topped with bacon egg and cheese for breakfast, pulled pork for lunch, and served with tomato sauce and cheese as a ‘pizza’ for dinner,’’ Seminsky said.

“The bagel acts as the center to enjoy with coffee or beer. In the food and beverage industry, this has become a pretty strong business model. With rents as high as they are in Shanghai, if you don’t have a strong concept you’re unlikely to meet success,’’ he added.

While bagels have a long history, dating back to Poland in the 1600s, Seminsky explained that at Boom Boom they set out to create bagels all their own.

“We perform a much longer fermentation to allow the flavors to develop... and we’ve also switched up some of the ingredients to develop a more elastic versus a denser chew.’’

In the morning, Boom Boom offers a breakfast set that includes a bacon-egg-and-cheese bagel with a coffee for 45 yuan (US$7).

At lunch, one popular choice is the smoked pulled-pork, pickle and barbecue-coleslaw stuffed Hindquarter (55 yuan). Another favorite is the Sailors Legs (60 yuan), made with smoked salmon, red onion, green olives, hummus, honey vinaigrette and ricotta.

According to Seminsky, Boom Boom also recently introduced a new cinnabun-style bagel creation.

“You need to continue to innovate and add new items to create more reasons for your regulars to return,” Seminsky said.
