Chefs to claim ‘world's largest’ Hunan cuisine dish with 50kg bighead fish
A BIGHEAD fish weighing 50 kilograms or more caught in the central Chinese province of Hunan, will be named the world's biggest local Hunan cuisine dish in the 23nd Chinese Chef Festival on Sunday, rednet.cn reported today.
The 1.4-meter-long fish, called a yong fish in Chinese, was captured and raised in the Jiang Ya River reservoir in Zhang Jiajie, living with 20 other large fish inside a net enclosure. It already had reached 49.5 kilograms when it was caught and put in the enclosure four years ago, the report said.
Its final weight will be announced at the opening ceremony of the festival on Sunday, officials said.
Fishery workers put a large fishing net into the enclosure to trap the fish. Two workers jumped into the water to drive away other fish. Finally the monster fish was dragged into a water basin, and transported to the festival location.
Bighead fish, famous for its huge head, are considered the best raw material for Hunan cuisine.
On Sunday, the giant fish will be presented as famous Hunan steamed fish head in chili sauce. Local chefs made a special porcelain plate with a diameter of 1.68 meters to serve the dish.
Organizers said they would attempt to submit the dish to Guinness World Records.
Guinness records indicate the record for the largest serving of fish and chips was set at 47.75kg in 2012.
