Three Japanese choices, one classy venue

FEW Japanese restaurants have the ability — or the panache — to serve three different dining experiences at once, under one roof. Ginza Onodera, the acclaimed Japanese fine dining concept originally from Ginza, Tokyo, offers superior quality teppanyaki, tempura and omakase (chef’s choice) sushi in different rooms. The restaurant, located at Bund 18, just celebrated its one-year anniversary in Shanghai.

Don’t expect to taste all of three categories in one meal. They are operated separately by sushi chef Akifumi Sakagami, teppanyaki chef Takanori Kanbe and tempura chef Ishiii Hiromichi. The chefs collect rare ingredients and follow a traditional beverage list to present the perfect pairings.

I picked the sushi omakase course (chef’s menu according to the availability of fresh fish) on my recent visit and started an incredible food journey with a glass of sparkling sake.

It had the perfect balance between texture and flavor. Such a delightful and delicate drink to start, I found it hard to stop drinking it.

At the same time, a premium selection of appetizers was offered on the table along with equally impressive Japanese tableware.

I started my omakase experience with steamed egg with ikura (salmon egg) and a delicate plate of sashimi. The freshness of the seafood was beyond doubt. The sushi course followed with precisely balanced flavors that increased as the meal progressed.

I was even given instructions from the chef to eat with my hands to ensure a true premium Japanese sushi dining experience. And one can watch the sushi chef demonstrating his skills while indulging in such delicacies.

The highlight was the Grilled Supreme Fatty Tuna, and the flavor and texture of this was more interesting than the raw tuna itself. Sea Urchin, as the last sushi presented, was obviously the most popular among diners. With a hint of soy sauce, no words could describe the delightful experience.

The amazing experience ended with an equally impressive Japanese dessert: Green Tea Panna Cotta. Along with the exquisite food, the service was impeccable offered by knowledgeable and friendly staff.

With its high-end positioning, Ginza Onodera is not your average dining venue. It definitely offers a beautiful experience to impress guests or celebrate a special occasion.
