The perfect combination of history and local flavors

MOTT539, known as Sinan Jiangyan, is housed in a prestigious villa that years ago belonged to Kung Hsiang-his and his wife, Eling Soong.

The influential couple often hosted an extraordinary assemblage of politicians, tycoons, intellectuals and artists.

Today, the mansion at the corner of Fuxing Road M and Sinan Road still retains some of the original features, but with the original 1920s in harmony with more modern touches.

Mott539 is a premium Huaiyang restaurant dedicated to some of the best the region has to offer. Huaiyang cuisine comes from the native cooking styles of the region surrounding the lower reaches of the Huai and Yangtze rivers.

It might be less known compared to other Chinese cuisines such as Sichuan, Hunan or Cantonese, but it is considered one of the most prestigious and elegant cuisines.

Light and fresh, delicate Huaiyang cuisine is famous for meticulously cut iingredients.

Spring offers one of the best times to enjoy the regional specialties, including freshwater fish from the Yangtze.

The team selects only the best ingredients from the Yangtze areas.

General manager Caesar Liu says they are meticulous in buying ingredients. Everything must come direct: Shanghai Sunshine Farm delivers freshly picked organic vegetables every morning. In order to maintain the freshness of fish and shrimps during transportation, the water temperature is kept at constant zero degrees Celsius.

Executive chef Zhang Dejian from Jiangyin, Jiangsu Province inherited traditional cooking methods for Yangtze River Fish from Huaiyang cuisine master Yang Zhenghua and developed several specialties such as Braised Fugu Fish, Steamed Yangtze River Catfish in white soup, Homey Coilia Nasus and Yangtze Fish Ball.

Chef Zhang preserves the succulent flavors, whether the fish is steamed or braised.

Of the array of dishes, Steamed Reeves Shad was the highlight.

It was steamed with a 30-year-old Huadiao wine and oil so the full flavors are brought out. The meat is tender with its special flavor but for those afraid of fish bones just be careful.

The shad tastes best in April to June when the fish swim back from the East Sea. Each dish is cooked in order to optimize its aromas, flavor and texture.

Mott539 is one of the best venues to come with family or for social gatherings. It has both shared dining space and private rooms on the second and third floor.
