Return of Camelia brings traditional Italian cooking to Four Seasons

Camelia at Four Seasons Hotel Pudong, Shanghai has just reopened as a contemporary casual Italian restaurant. During its transformation from a chic French restaurant to an inviting Italian cucina, executive chef Weimar Gomez developed an all-new menu of signature pizzas, antipasti, desserts as well as dishes for sharing.

“I think at an Italian restaurant it’s easier for people to understand good food,” explained Gomez, who has previously worked at three-Michelin-starred restaurant Guy Savoy and the Four Seasons Hotel George V Paris.

“With simple ingredients, people can understand Italian cuisine. French (food) is more complicated. People think French restaurants are very serious and some people don’t have the confidence to go to such restaurants yet. The guests we have at the hotel need something less formal, more welcoming and easy for everyone,” the chef explained.

During the process of renovating the restaurant, Camelia was closed for 10 days to install a new pizza oven. This new piece of equipment will be used to cook up a range of freshly-baked pizzas with toppings such as mozzarella and Parma ham. According to Gomez, a special Black Pizza topped with seafood will also be making its way onto the menu in the future.

When it comes to pasta, Gomez recommends the paccheri with short rib ragout and taggiasche olives. The short ribs used for this dish are slow cooked for several hours until they’re perfectly tender.

Another top choice is the roasted cod cartoccio with clams, mussels and fennel. The fresh fish is cooked in a paper parcel to keep the meat moist and flavorful.

Four dishes are offered for sharing, including the Bistecca alla Fiorentina, a tomahawk rib eye made with grain fed black angus.

And for dessert, you can’t go wrong with a classic tiramisu, presented on a wooden board with pistachio biscotti chips on the side.

At Camelia, the Italian dining experience starts the moment guests take their seats. The drink list features classic limoncello and grappa, while an Italian wine list is served by advance sommelier Ying Guo.

Wines from lesser-known Italian regions are represented as well. The current pick of the month is Pinot Nero by winemaker Franz Haas in Aldo Adige, Italy, a northern area near the Austrian boarder.

Brunch on Sundays delivers authentic Italian dishes made from high quality ingredients, while children can participate in simple cooking classes to learn about classic Italian dishes like pizza and lasagna.

“The goal is to immerse people into an Italian dining culture. It’s about sharing, having a glass of wine with friends and family,” said Food and Beverage Director Nicolas Senes. “You come to Camelia for a full Italian experience.”

And, with autumn now upon us, Camelia’s outdoor terrace is the perfect place to enjoy the cooler weather.
