French baking tradition gives rise to Bread etc

BREAD etc, located at corner of Jianguo Road W. and Xiangyang Road N., offers freshly baked breads and other café essentials like pizza and brunch egg items. Visitors will be enthralled by the tempting, beautifully presented breads, tarts and other petite sweets. It also has an impressive 500-square-meter space decked out with modern design furniture.

The creative mind behind Bread etc is French-Israeli baker Stephan Laurent, who was introduced by chance to the venue’s owners. They truly believed in his talents and ability to add something new to Shanghai’s bakery and café scene.

“The challenge was huge, and pastry is my passion. The idea of such an adventure made me decide to leave everything and start this new life in Shanghai,” Laurent said.

Laurent said he had his first experiences as a baker at age 14, when he decided to bake bread for his family using his grandmother’s recipe. Although this first experiment turned into a “disaster” in his mother’s kitchen, it was enough to put Laurent on the path toward making bread the traditional French way.

A former consultant for restaurants and cafes all over the world, Laurent opened the first Bread etc shop in Tel Aviv.

“Years later, this first shop inspired me to create the Bread etc. venue in Shanghai,” he said. “The idea was to make customers feel like they’re in Europe in this light-filled café and enjoying high quality food in a sophisticated venue with casual decoration and service.”

All ingredients come from France to ensure the best quality breads and pastries. All breads at Bread etc are made according to authentic French tradition, according Laurent. The sour dough baguette, the bread favored by Parisians, is made from quality flour and has irregular air holes throughout from natural fermentation.

After the simple pleasures of the top-class baguettes and loaves, my personal favorite, pain au chocolat, didn’t fail to satisfy either. Rich and buttery, a good pain au chocolat with a cappuccino is the perfect combo to start any day.

Aside from the signature breads and pastries, Laurent highly recommends the Shakshouka, which he calls “the winner of the season,” thanks to its voluptuous blend of tomato and red bell pepper, a hint of spicy and soft eggs on the top.

Bread etc has already become a favorite spot for breakfast, coffee meetings and casual lunches. Plans are now underway to expand the concept with more shops in the city.
