Dodu brings classic French rotisserie chicken to Shanghai

GOLDEN brown and deliciously moist, classic French rotisserie chicken is a true delight. At Dodu, the recently opened French rotisserie, one can enjoy succulent roast chicken right here in Shanghai.

In France, people often bring take-away roast chicken home for simple family meals. Dodu, located on Changshu Road, offers a similar concept for local diners. They also have a seating area for those who want to have a simple meal with a glass of wine or beer.

Chief among those behind Dodu is Frenchman Hugo de Mondragon, who missed the delicious rotisserie chickens he grew up eating. Coming from a management consulting background, he decided to start something new in Shanghai. “I used to work in a rotisserie before, during summers, and I always liked the simplicity of the concept,” he said.

It took him six months to find the venue on Changshu Road close to Changle Road. “I wanted to create a vibe reminiscent of a butchery at the beginning of the century, but in a more sophisticated, modern way,” he added.

The two-level space is sleek with copper details. The roasting birds are definitely the highlight on the first level where an imported rotisserie machine is prominently displayed.

It took Hugo even longer to find grade-A, free-range chickens from a supplier in Fengxian District. They are Red Label Yellow Chickens, a premium breed initially from France and locally raised in peach and plum tree fields. Dodu’s chickens eat exclusively natural grains and drink filtered water. They are also completely hormone, steroid and antibiotic free.

The chickens are slow-roasted to perfection in the huge oven on top of delicious crispy potatoes which have been baked in chicken juices.

The skewered roasting birds release an aroma that wafts into the space, while the crispy browned skin is enough to tempt anyone into making an order. On weekend evenings, diners need to be patient as there is sometimes a queue.

The chef stuffs the chickens with rosemary, thyme and extra virgin olive oil. They are then seasoned for one hour then roasted for 90 minutes. Chickens can be ordered in quarters, halves or whole portions, with prices at 58 yuan (US$8.40), 108 yuan and 198 yuan respectively. For two people sharing a half chicken and two sides, it will cost 138 yuan.

The chickens have not the slightest hint of dryness. They are wonderfully juicy and full of flavor. Drizzled in Sauce du Volailler (elaborated with roast chicken juice), the meat became even more delicious.

Diners can also chose from a range of homemade sauces, including traditional French garlic mayonnaise and daily specials. Side options include Roast Dripping Potatoes, Peas and Carrots, and Sauteed Cauliflower.

Aside from classic French-style birds, the Dodu Asian Roast Chicken is seasoned with a secret local spice mix, ginger, soy sauce and honey, giving chicken lovers another reason to come back and try something different.
