Food that cools the body and tantalizes the taste buds

BEATING the summer heat is not just about where to go but also about what to eat. Here are some food tips on dishes that offer respite for any overheated body.

Cold noodles

This is a popular dish throughout East Asia, though cooking methods vary from country to country. In Minhang, the best bets are cold noodles served in the Chinese, Japanese or South Korean styles.

Traditionally, Chinese cold noodles are served with a sauce. The noodles are sprinkled with a bit of oil to keep them smooth when mixed with a sauce of soy, vinegar and peanut butter. The most common noodle dish is called sansi, which combines sautéed shredded pork with green peppers and wild rice stems.

In Japan, two types of cold noodles are very popular. One is called hiyashi chuka, which translates as “Chinese cold noodles.” In China, however, the dish is called Japanese-style cold noodles. Go figure!

The sauce is similar to authentic Chinese cold noodles, but the toppings vary. Sliced cucumber, tomato, crab sticks, ham and chicken are among the most popular.

Another Japanese noodle dish is called soba, which is made from buckwheat noodles. Soba is usually served with just soy sauce, but the taste and texture seem made for summertime eating.

In South Korea, cold noodles are served as a cold soup. The noodles in beef or chicken broth are topped with sliced pork, egg, vegetables and, essentially, pickles.

In the Hongqiao area where many Koreans live, restaurants feature this cold noodle soup on the summer menu. Many boast that their soups have secret ingredients that impart delectable flavors.

Ice cream

And before we leave the realm of food, who can forget that summertime stalwart — ice cream?

Ices of all varieties are found everywhere — from street stalls to convenience stores to high-end restaurants. There’s no end to the creative imagination that goes into making ice creams of all flavors and textures.

So experiment!

Due to its sulphury odor, durian is one fruit that gets by-passed by a lot of people. But have you ever tried it in ice cream or in cakes? The flavor of the fruit comes alive in formats that downplay the strong smell. Some people consider it quite addictive.

The Maoshanwang Durian Cakes & Sweets shop offers durian flavored ice-cream, milkshakes, cakes and pudding. Hardcore durian lovers might want to try the chiffon cake, noted for its rich fragrance and taste. The puddings and ice cream are much lighter, by comparison.

For healthier, lighter ice cream, try the Stickhouse, which sells popsicles of all flavors, colors and shapes. The hand-made popsicles use fresh fruit and no artificial additives. Italian-style gelato is also a special favorite of ice cream connoisseurs.
